Animal protein is simply recycled protein from an original plant source. Logic would conclude that the original source which happens to be plant based is technically the only source of protein provided by nature. Eating animal protein is no different than committing catabolism in my book

Ooey, gooey fudgy Chickpea Brownies complete with a decadent chocolate centre and the perfect crackly top

Gluten Free + Vegan

INGREDIENTS
2/3 cup | 145 g coconut oil
180 grams dairy free dark chocolate chopped finely or in chips
1/2 cup | 120 ml aquafaba (the watery brine from unsalted cans of chickpeas)
3/4 cup | 150 grams sugar
1 teaspoon vanilla extract
1 1/2 cup | 150 grams chickpea flour, sifted if lumpy
1/4 cup | 22 grams unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup | 90 grams dairy free chocolate chips optional

INSTRUCTIONS

-Preheat oven to 325°F/150°C. Lightly grease or line an 8x8inch baking tin. Set aside
-Place the coconut oil and chopped chocolate together in a microwave safe bowl. Melt in 30 second increments whisking after each segment until the chocolate is completely melted and smooth. Once melted set aside to cool.
-In another large mixing bowl beat the aquafaba and the sugar together with an electric mixer until thick and shiny. Mix in the vanilla extract and the melted chocolate mixture.
-Stir in the chickpea flour, cocoa powder and baking soda. Mix until you have a thick, fully mixed batter. Stir in the chocolate chips.
-Pour the batter into the prepared baking tin. Bake for 30 minutes and then check for doneness. Insert a knife or tooth pick into the centre of the brownies - if it comes out with a wet batter it needs more time. If only a few moist crumbs remain on the knife/tooth pick it's done. If you need to cook the brownies longer check every 3-4 minutes until it's done and then remove from the oven.
-Let the brownies cool in their tin completely before slicing into.

Ooey, gooey fudgy Chickpea Brownies complete with a decadent chocolate centre and the perfect crackly top 

Gluten Free + Vegan 

INGREDIENTS
2/3 cup | 145 g coconut oil
180 grams dairy free dark chocolate chopped finely or in chips
1/2 cup | 120 ml aquafaba (the watery brine from unsalted cans of chickpeas)
3/4 cup | 150 grams sugar
1 teaspoon vanilla extract
1 1/2 cup | 150 grams chickpea flour, sifted if lumpy
1/4 cup | 22 grams unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup | 90 grams dairy free chocolate chips optional
 
INSTRUCTIONS

-Preheat oven to 325°F/150°C. Lightly grease or line an 8x8inch baking tin. Set aside
-Place the coconut oil and chopped chocolate together in a microwave safe bowl. Melt in 30 second increments whisking after each segment until the chocolate is completely melted and smooth. Once melted set aside to cool.
-In another large mixing bowl beat the aquafaba and the sugar together with an electric mixer until thick and shiny. Mix in the vanilla extract and the melted chocolate mixture.
-Stir in the chickpea flour, cocoa powder and baking soda. Mix until you have a thick, fully mixed batter. Stir in the chocolate chips.
-Pour the batter into the prepared baking tin. Bake for 30 minutes and then check for doneness. Insert a knife or tooth pick into the centre of the brownies - if it comes out with a wet batter it needs more time. If only a few moist crumbs remain on the knife/tooth pick its done. If you need to cook the brownies longer check every 3-4 minutes until its done and then remove from the oven.
-Let the brownies cool in their tin completely before slicing into.

Meyer Lemon Curd

1 12 oz package extra firm silken tofu, liquid drained
1/2 cup fresh Meyer lemon juice, 5-6 lemons
1 teaspoon lemon zest
1 cup granulated sugar
1/4 cup powdered sugar
2 tablespoons cornstarch
1 teaspoon vanilla extract

Instructions
To make the crust

Preheat the oven to 350 degrees F. Line an 8x8 square baking pan with parchment paper and set aside.
In a stand-up mixer with the paddle attachment, beat the butter, sugar, and lemon zest together until smooth and creamy. Add flour and mix until well incorporated.
Press the dough into the prepared pan and bake for 20 minutes until light golden brown. Remove from oven and let cool for at least 15 minutes.

To make the Lemon Curd

In a food processor combine tofu, lemon juice, zest, and granulated sugar and process until smooth and creamy, scraping down the sides as necessary.
Add the powdered sugar, cornstarch, and vanilla extract and process again until combined.
Pour into cooled crust and bake for another 25-30 minutes until lemon curd has set.
Let cool at room temperature for 20 minutes and then place in the refrigerator to cool all the way.
Dust with powdered sugar or candied lemon slices just before serving.

    Press the dough into the prepared pan and bake for 20 minutes until light golden brown. Remove from oven and let cool for at least 15 minutes.

To make the Lemon Curd

    In a food processor combine tofu, lemon juice, zest, and granulated sugar and process until smooth and creamy, scraping down the sides as necessary.
    Add the powdered sugar, cornstarch, and vanilla extract and process again until combined.
    Pour into cooled crust and bake for another 25-30 minutes until lemon curd has set.
    Let cool at room temperature for 20 minutes and then place in the refrigerator to cool all the way.
    Dust with powdered sugar or candied lemon slices just before serving.

Ingredients

Instructions

Preheat the oven to 325 F and grease or line with parchment paper 2 cookie sheet trays .
With a box grater or food processor , grate the carrots. You will need about 2 large carrots if you're not purchasing already shredded ones.

Fold in the shredded carrots and raisins.
Measure out 1/4 cup of batter and roll into a ball. Place the ball onto the cookie sheet and press down until the cookie is about 1/4" thick. The dough is a little sticky, so if you wet your hands it will help keep the dough from sticking to them.
Bake for 9-10 min. or until the center of the cookie is slightly springy to the touch and the dough is no longer sticky.
Allow the cookies to cool slightly (about 10 min.) and then transfer them to a wire rack to continue cooling...or just go ahead and eat them!

Vegan White Lasagna Soup

Cheesy and rich soup with lasagna noodles and Italian spices. This super comforting soup tastes just like white lasagna.

Ingredients:

Cashew Cream

1 Cup Raw cashews, soaked
1 Cup Vegetable broth
1 Tablespoon Lemon juice
Pinch of Salt and pepper

For the Rest of the Soup

1 Tablespoon Olive oil
6 Cloves Garlic, chopped
1/2 a Sweet onion, chopped
Juice of 1 Lemon
6 Cups Vegetable broth
2 Teaspoons Italian seasoning
1/4 Cup Nutritional yeast
2 Teaspoons Agave syrup
8 Lasagna sheets
Salt and Pepper to taste

Instructions:

The cashews need to be soaked for 6-8 hours. Overnight is great! If you are in a pinch, you can soak the cashews in boiling water for about 15- 30 minutes.

Once you are ready to make the soup, make the cashew cream first. Drain the soaked cashews and add them to a blender with the rest of the cashew cream ingredients. Blend on high, scraping down the sides as needed until the cream is super smooth and velvety with no texture. This may take a few minutes. Set this aside.

Now, in a large soup pot, heat the olive oil on medium high. Then add the garlic and onions to the pot. Saute, reducing heat as needed until the garlic and onions are slightly caramelized. This may take 5-10 minutes.

Then add the lemon juice to the pot and scrap any bits of garlic and onion off the bottom.

Next, pour in the vegetable broth, and whisk in the Italian seasonings and nutritional yeast and agave.

Now, pour all the cashew cream you made into the pot and whisk to combine everything.

Season with a few pinches of salt and pepper. Bring to a simmer.

Next, break the lasagna sheets into about 1-2 inch pieces. Then add them to the soup.

Simmer, stirring frequently until the noodles are al dente. Check your package for timing.

Once the noodles are done, taste and adjust seasoning. I needed to add more salt.

Serve immediately. I like to add some spinach or greens to my bowl and pour the soup over so my spinach doesn't get over cooked! Top with fresh herbs!

Take a square of parchment paper, place on top of each ball and press down on it with the bottom of a glass to flatten it into a burger shape.
Place the baking tray with the 4 burgers into the freezer to firm up for 30 minutes.
After 30 minutes add 2 Tbsp avocado oil to a frying pan and heat up until hot.
Add all 4 burgers to the frying pan and fry on each side turning regularly until browned and crispy, roughly 5 minutes on each side.
If you want your burgers extra firm and crispy you can place on a parchment lined baking tray and bake in the oven at 400°F (200°C) for a further 20-30 minutes.
Serve on hamburger buns with sliced avocado, crispy lettuce, sliced tomato, ketchup and mustard.

Ingredients

    1 Onion
    3 Cloves Garlic
    1 15oz (425g) Can Chickpeas*

Lets talk about plant fat. Another reason why eating raw living food and raw juice is amazing:

Plant Fats

• Higher fat raw plant foods, such as avocados and nuts and seeds, contain relatively healthy, unsaturated fats.
• These high fat plant foods contain plenty of their own fiber, which binds to excess cholesterol.

• Essential fatty acids:
Two types of fats that the body cannot make, so they need to be obtained from diet. These are called essential fatty acids (EFAs).
1- Alpha linolenic acid – Omega 3. Omega 3 fats reduce inflammation.
2- Linoleic acid – Omega 6. Omega 6 fats generally promote inflammation.

Ideal ratio of omega 6 to omega 3 fats is between 1 to 1 and 4 to 1. When we consume in excess of four times the amount of omega 6 fats compared to omega 3 fats, we tend to create excess inflammation.

The average American consumes 20 times more omega 6 fats than omega 3 fats. Omega 6 fats are largely found in animal products and processed foods.
– Omega 3 fats
Omega 3 fats are abundant in leafy green vegetables, flax seeds, chia seeds, hemp seeds, and certain types of algae. Smaller amounts of omega 3 fats can be found in fruits and non-green vegetables.

• The standard American diet (SAD) diet contains an over-abundance of omega 6 fats from:
– Processed foods.
– Commercially produced animal products.
– Not enough fruits, vegetables.
* They contain the omega 3 fats that reduce inflammation.

A diet based on raw fruits, vegetables, nuts, and seeds, and especially a diet that has an abundance of greens and includes some flax or chia seeds, supplies adequate amounts of omega 3 fats. This is without the excess of omega 6 fats, which is seen in typical modern human diets.

Healthy fats and blood sugar regulation:

– Glucose – blood sugar
– Insulin escorts glucose out of blood and into cells
– Insulin resistance – insulin is unable to do its job properly and blood sugar remains too high
– Insulin resistance – is the hallmark of type II diabetes, also known as adult onset diabetes.
An excess of saturated fats, trans fats, and omega 6 fats, along with decreased amounts of omega 3 fats, make major contributions to insulin resistance. Numerous studies have shown that diets that include more whole natural plant foods, instead of processed foods, can have a significant impact on insulin resistance and blood sugar levels. Cholesterol comes from two places: animal foods and your body.
– Low fat and high fiber whole natural plant foods, such as raw vegan and living foods, cause the liver to produce less cholesterol to make bile that emulsifies fat in the foods.

• Fresh raw and living foods also contain an abundance of fiber to bind to any excess cholesterol, thus keeping cholesterol at an appropriate level.

Raw Bounty Slice is super healthy and is gluten, dairy and refined sugar free. It is one seriously epic dessert.

You need to make sure that you allow the slice to freeze for 3-4 hours before you slice it. You want to make sure the coconut layer is completely frozen, otherwise the chocolate layer may split when you slice it.

Ingredients

Base

1/2 cup cashews or macadamias
2/3 cup almond meal
3 tablespoons coconut oil
1 tablespoon maple syrup

Coconut layer

1/4 cup coconut oil, melted
1 cup coconut milk, canned variety
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/4 teaspoon sea salt
3 cups organic shredded coconut

Chocolate layer

1/2 cup coconut oil
2 tablespoons maple syrup
1/2 cup raw cacao powder

Instructions

To make the base, process the cashews, almond meal, coconut oil, maple syrup in a blender or food processor until they resemble crumbs. Spoon mixture into a lined square baking tin (20x20cm) and smooth with the back of a spoon. Place in the freezer while you make the coconut layer.
To make the coconut layer, add the melted coconut oil and coconut milk to a medium size bowl and whisk to combine well (you want to make sure that there is no separation between the oil and milk). Next, add the maple syrup, vanilla extract and sea salt and mix well. Then, add the shredded coconut and mix until well combined. Pour over the base, smooth with the back of a spoon and place back into the freezer while you make the chocolate layer.
To make the chocolate layer, melt the coconut oil in saucepan on low heat. Once melted, remove from heat and add the maple syrup, whisking briskly until well combined. Then add the cacao powder, stirring until well mixed through. Pour the chocolate on top of the coconut layer and make sure it is evenly spread. Place back into the freezer and let it set completely. You want to ensure that all layers are frozen, so it may take 3-4 hours.
Remove from the tin, slice straight away and store in an airtight container in the freezer.

Notes

You may need to run the knife under hot water to make it easier to slice.
Cook time does not include the time it takes for the raw bounty slice to freeze — approximately 3-4 hours, depending on the temperature of your freezer.

These vegan pumpkin spice donuts and moist, fluffy and with filled with pumpkin spice! Bake up a batch for breakfast, a snack or dessert!

Ingredients

2 cups flour (I use spelt, but regular, gluten-free blend also work)
1/2 cup organic cane sugar
2 tsp baking powder
2 tsp baking soda
1/4 tsp salt
2 tsp pumpkin spice
1 1/4 cup almond milk
1 tbsp apple cider vinegar
1/4 cup coconut oil, melted
1/3 cup pumpkin puree
1 tsp vanilla extract

Cinnamon sugar Coating:

1/2 cup organic cane sugar
2 tsp cinnamon
coconut oil spray (optional)

Instructions

Preheat the oven to 400 degrees F and spray a donut pan with cooking spray.
Mix the flour, sugar, baking powder, baking soda, salt and pumpkin spice together in a bowl.
Mix the almond milk and apple cider vinegar together and let sit for 5 minutes to turn into “buttermilk”
Then add the coconut oil, pumpkin puree and vanilla extract to the almond milk mixture and mix until combined.
Pour the wet ingredients into the dry ingredients and mix just until combined.
Using a piping bag, pipe the dough into the donut moulds filling 3/4 of the way.
Bake for 10-12 minutes or until a toothpick comes out clean.
To coat, mix the sugar and cinnamon together in a ziplock bag. While the donuts are still warm, place each donut in the bag and shake so the coating sticks. (You can alternatively let the donuts cool, then spray with an oil spray and coat.

Beautiful plant-based Chopped Thai Chickpea Salad with a super flavorful curry peanut dressing. Healthy, easy to make and a great way to get your veggies in!

Ingredients

For the salad:
1 red bell pepper, diced
1 cup shredded carrots (from the bag)
½ small head of red cabbage, chopped (about 2 cups shredded cabbage)
1 (15 ounce) can chickpeas, rinsed and drained
½ cup cilantro, finely chopped
¼ cup finely chopped green onion
1/2 jalapeño, seeded and diced
For the curry peanut butter dressing:
2 tablespoons peanut butter
1/2 tablespoon freshly grated ginger
1 clove garlic, minced
1 teaspoon apple cider vinegar or rice vinegar
1 teaspoon yellow curry powder
¼ teaspoon red cayenne pepper
¼ teaspoon ground turmeric
Salt and freshly ground black pepper, to taste
2-3 tablespoons warm water, to thin dressing
To garnish:
Extra cilantro
¼ cup roasted cashews

Instructions

Perfectly moist and utterly delicious vegan pumpkin cake with a cinnamon buttercream frosting. Spicy and colorful and ideal for any special occasion!

For the Pumpkin Cake:

2 cups (250g) All Purpose Flour
1 cup (200g) Brown Sugar
1/2 cup (100g) White Sugar
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
2 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1/2 tsp Ground Ginger
1/2 tsp Ground Cloves
1 and 1/2 cups (337g) Pumpkin Purée (not pumpkin pie filling)
1 tsp Vanilla Extract
1/4 cup (60ml) Extra Virgin Olive Oil (or other vegetable oil)
1 Tbsp Apple Cider Vinegar
1 Flax Egg

For the Cinnamon Buttercream Frosting:

3 and 3/4 cups (450g) Powdered (Confectioners) Sugar
1/2 cup (112g) Vegan Butter/Margarine
1 tsp Vanilla
2 Tbsp Soy Milk (or other non-dairy milk)
1 tsp Cinnamon

For Decoration:

Cinnamon
Crushed Walnuts

Instructions

Preheat the oven to 350°F (180°C).
Sift the flour into a mixing bowl and add the sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger and cloves.
Prepare your flax egg by adding 1 Tbsp ground flaxseed meal to a bowl and then adding in 3 Tbsp of Hot Water and allowing to sit for a minute to become gloopy.
Add the pumpkin purée, vanilla, olive oil, apple cider vinegar and flax egg to the mixing bowl and mix in very well. The batter will be thick.
Spray two 7 inch cake tins with non-stick spray and then add a circle of parchment paper to the base of each cake tin.
Divide the batter equally between the cake tins.
Place into the oven and bake for 30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
Transfer to a wire cooling rack and allow to cool completely before frosting.
Prepare your frosting by adding the powdered sugar, vegan butter, vanilla and soy milk to the bowl of an electric mixer. Starting at slow speed, gradually increase the speed until smooth. If your frosting is too thick, add in soy milk a drop at a time until it reaches the right consistency. If it is too thin, add in more powdered sugar.
Add the cinnamon in last and mix on low until just mixed in.
When your cakes are completely cooled, frost the top of one of the layers. Then add the other layer on top and frost the whole cake.
Sprinkle with cinnamon and add crushed walnuts to the top.

Notes

*I used homemade pumpkin purée. I baked the peeled and chopped pumpkin in the oven (plain, no oils or spices) for 30 minutes at 350°F (180°C) until soft and cooked and then pureed it in the food processor. If you do it this way and your purée is a bit ‘wet’ then stand it in a strainer so any excess water can run off.

*Nutritional information is an estimate based on 1 slice of 10 with a generous amount of cinnamon buttercream frosting. Excludes crushed walnuts.

*For the most accurate results, weigh your flour and your pumpkin purée.

    1/2 cup (112g) Vegan Butter/Margarine
    1 tsp Vanilla
    2 Tbsp Soy Milk (or other non-dairy milk)
    1 tsp Cinnamon

For Decoration: 

    Cinnamon
    Crushed Walnuts

Instructions

    Preheat the oven to 350°F (180°C).
    Sift the flour into a mixing bowl and add the sugar, baking soda, baking powder, salt, cinnamon, nutmeg, ginger and cloves.
    Prepare your flax egg by adding 1 Tbsp ground flaxseed meal to a bowl and then adding in 3 Tbsp of Hot Water and allowing to sit for a minute to become gloopy.
    Add the pumpkin purée, vanilla, olive oil, apple cider vinegar and flax egg to the mixing bowl and mix in very well. The batter will be thick.
    Spray two 7 inch cake tins with non-stick spray and then add a circle of parchment paper to the base of each cake tin.
    Divide the batter equally between the cake tins.
    Place into the oven and bake for 30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
    Transfer to a wire cooling rack and allow to cool completely before frosting.
    Prepare your frosting by adding the powdered sugar, vegan butter, vanilla and soy milk to the bowl of an electric mixer. Starting at slow speed, gradually increase the speed until smooth. If your frosting is too thick, add in soy milk a drop at a time until it reaches the right consistency. If it is too thin, add in more powdered sugar.
    Add the cinnamon in last and mix on low until just mixed in.
    When your cakes are completely cooled, frost the top of one of the layers. Then add the other layer on top and frost the whole cake.
    Sprinkle with cinnamon and add crushed walnuts to the top.

Notes

*I used homemade pumpkin purée. I baked the peeled and chopped pumpkin in the oven (plain, no oils or spices) for 30 minutes at 350°F (180°C) until soft and cooked and then pureed it in the food processor. If you do it this way and your purée is a bit ‘wet’ then stand it in a strainer so any excess water can run off.

Vegan Shepherds Pie

Good old family classic shepherd’s pie made vegan friendly. A perfect comfort food dish for a cold winter’s day, which the whole family will enjoy (even the fussiest little eaters will love it). Vegan, gluten & dairy free.

Ingredients

1/2 cup green lentils
3 medium size sweet potatoes , peeled and diced
1 tbsp . olive oil
1 medium onion , finely chopped
2 garlic cloves , crushed
1 medium carrot , finely grated
1 heaped tsp smoked paprika
1 tbsp tomato puree
1 tin organic chopped tomatoes
1/2 cup green peas ( I used frozen)
Salt & pepper
1/4 tsp red chilli flakes
A bunch of fresh coriander

Instructions

1. Cook the lentils according to the packet instructions. Set aside. * You can also use pre-cooked lentils to save time (they sell them in little pouches in UK supermarkets).

2. Preheat the oven to 200C.

3. Place diced sweet potato in a pan, season with salt & pepper, cover with water & bring to a boil. Reduce to a medium heat & cook until the potatoes are soft. When cooked, cool slightly before mashing the potatoes up. Set aside.

4. In the meantime, fry the onions and garlic in a pan with 1 tbsp. olive oil on a low to medium heat until just softened. Add grated carrot & cook for a further 2 minutes. Stir in tomato puree, smoked paprika & chilli flakes and cook for a further 2 minutes.

5. Add cooked lentils into the pan with onions & garlic & mix well. Stir in chopped tomatoes & peas & cook on medium heat for around 5 minutes. Take the pan off the heat, add freshly chopped coriander and season with salt & pepper.

6. Transfer the lentil mixture into an oven proof dish and spread evenly. Top with sweet potato mash (use a fork to spread the mash evenly).

7. Bake in the oven for 10-15mins until the potato is starting to turn golden brown.

Vegan One Pot Pasta with Creamy Tomato Sauce

This delicious pasta dinner is a healthy meal and a real time saver! The veggies, gluten free pasta, and creamy vegan tomato cream sauce simmer in one pot, and turn into healthy dinner magic.

Servings 4

Ingredients

1 box Chickapea Pasta or any gluten free pasta (8 ounces gluten free pasta)*
1/2 tablespoon olive oil
1/2 red onion sliced thinly
4 cloves garlic minced
1 bell pepper I used half orange, half yellow
2 cups green beans ends trimmed
1/3 cup sundried tomatoes chopped roughly
herbs (fresh thyme, basil, Italian parsley or green onions) to garnish
sea salt and black pepper to taste

Creamy Tomato Pasta Sauce

1/3 cup cashews soaked 2 hours and rinsed
1 15-ounce can diced tomatoes
3/4 teaspoon sea salt or more, to taste
1 teaspoon cumin
1 teaspoon paprika
1 teaspoon fresh thyme (or 1/4 teaspoon dried thyme)
black pepper to taste
2 cups water do not add to the sauce

Instructions

Soak cashews in cold water for at least 2 hours or up to overnight. If you don't have time for this step, soak cashews in boiling water for 20 minutes.

Add soaked and drained cashews and diced tomatoes to a blender with all the seasonings for the sauce. Blend until very smooth, about 1-2 minutes in a high speed blender, or a bit longer in a standard blender. Set aside.

In a saucepan, add olive oil, and onions and garlic. Saute on medium high heat until the onions and garlic have begun to brown.

Add the sliced peppers and green beans, and saute until done to your liking. Remove all veggies from the pan and set aside.

In the same pot (really, there's no need to even wash it!), bring 2 cups of water to a boil, and then add Chickapea Pasta and the creamy tomato sauce. Allow to simmer on a low boil for 5-7 minutes, until the pasta is still al dente, but the sauce has begun to thicken. The sauce will seem like a lot, but will also cover the veggies.

Add the veggies and sun dried tomatoes in, and toss to coat. Garnish with fresh thyme, parsley, or basil.

This pasta is just as delicious the next day. The leftovers keep very well.

Sweet Potato & Black Bean Quinoa Bake

Serves: 6 Servings
Ingredients

4 cups sweet potatoes (1/2-inch cubes)
1 (15 oz) can black beans, drained and rinsed
1 cup uncooked quinoa, rinsed
1 cup frozen corn, thawed
2 cups vegetable broth
1 tsp. chili powder
2 tsp. cumin
1 tsp. garlic salt
½ tsp. dried thyme
½ cup green onions, chopped

Instructions:

-Preheat oven to 375 degrees F.
-Combine all ingredients, except for the green onions, in a 9x13 baking dish sprayed with cooking spray and bake, covered with tin foil, for 45 minutes.
-Remove tin foil and continue baking for an additional 15 to 20 minutes until liquid is mostly absorbed and the potatoes are tender.
-Remove from oven and let the casserole sit for 5 minutes so that any remaining liquid can be fully absorbed and sprinkle with green onions. Serve and enjoy!
NOTE: If it looks like there is still some liquid in the casserole after baking for an hour, it's okay! I was initially worried when I pulled out the casserole that it still seemed a bit "liquidy," but that instantly went away and absorbed perfectly after sitting out for a few minutes right before serving!

Fresh Thai Quinoa Salad with Peanut Sauce

Colorful, crunchy Thai Quinoa Salad tossed in the most amazing homemade garlic-ginger peanut sauce! Vegan, gluten-free, and oil-free.

Serves about 4-5 (more as a side)

Ingredients
3/4 cup uncooked quinoa
1 1/2 cups red cabbage (shredded)
1 medium carrot
1 red bell pepper
2 green onions
1/3 cup cilantro
1/2 cup cashews (or peanuts, or a combo of both)
Other additions: snow peas, edamame, tofu, cucumber, broccoli, fresh Thai basil, sesame seeds, bean sprouts, shredded kale, spinach, etc.

{For the garlic-ginger peanut sauce}
1/2 cup peanut butter (I use creamy, natural)
2 Tbsp. brown sugar or maple syrup (more/less to taste)
1 1/2 Tbsp. tamari/soy sauce
2 Tbsp. fresh lemon or lime juice
1-2 cloves garlic
3/4 tsp. fresh grated ginger, or more to taste
Hot water (to thin to desired consistency)
Optional: red pepper flakes

Directions
-Rinse and cook the quinoa according to package instructions.*
-Meanwhile, make the peanut sauce: mince garlic and grate ginger. Fresh Thai Quinoa Salad with Peanut Sauce

Colorful, crunchy Thai Quinoa Salad tossed in the most amazing homemade garlic-ginger peanut sauce! Vegan, gluten-free, and oil-free.

Serves about 4-5 (more as a side)

Ingredients
3/4 cup uncooked quinoa
1 1/2 cups red cabbage (shredded)
1 medium carrot
1 red bell pepper
2 green onions
1/3 cup cilantro
1/2 cup cashews (or peanuts, or a combo of both)
Other additions: snow peas, edamame, tofu, cucumber, broccoli, fresh Thai basil, sesame seeds, bean sprouts, shredded kale, spinach, etc.

{For the garlic-ginger peanut sauce}
1/2 cup peanut butter (I use creamy, natural)
2 Tbsp. brown sugar or maple syrup (more/less to taste)
1 1/2 Tbsp. tamari/soy sauce
2 Tbsp. fresh lemon or lime juice
1-2 cloves garlic
3/4 tsp. fresh grated ginger, or more to taste
Hot water (to thin to desired consistency)
Optional: red pepper flakes

Directions
-Rinse and cook the quinoa according to package instructions.*

Did you know that vitamin D is actually considered a pro-hormone and not a vitamin? It is capable of producing its own vitamin D through the action of sunlight on the skin, giving it the nickname, sunshine vitamin. It is estimated that sun exposure on bare skin for 5-10 minutes 2-3 times per week allows the body the ability to produce sufficient vitamin D. Recent studies have suggested that up to 50% of adults and children worldwide are vitamin D deficient.

So what are some of the health benefits of vitamin D?

1) Healthy bones: Vitamin D plays an important role in the regulation of calcium and phosphorus levels in the blood, two factors that are extremely important for maintaining healthy bones.
